Sticky BBQ wings


I love wings they are perfect for snacking on, taking to a party or to have as a side or starter. I came across this recipe for the perfect sticky BBQ chicken wings. The sauce is a perfect combination of sweet and savoury that can be used as a dip as well. The whole process is a quick and easy to follow.
For Wings
1kg of Chicken Wings
3tbsp baking powder,
1tsp chilli powder,
1tsp ground garlic 
1tsp smoked paprika, 
1/2tsp salt
1/2tsp pepper
1tsp Ground Onion

For Sauce
150g of ketchup
350g of BBQ Sauce
2 tbsp mustard
2 cloves garlic, minced
1 onion, finely chopped
½-3/4 cup brown sugar
¼ cup honey
¼ cup apple cider vinegar
2 tbsp soy sauce
1 tsp smoked paprika
few dashes of Worcestershire
1tsp of chilli powder
½ tsp Chinese five spice
granulated garlic, to taste
granulated onion, to taste

First preheat the oven to Gas Mark 7 (220C).
Then we start with the chicken wings. Once cleaned, I cut up my wings into two, into drums and flats. Then make a mixture of (3tbsp) baking powder, (1tsp) chilli powder, (1tsp each) ground garlic and onion, (1tsp) smoked paprika, (1/2tsp) salt and pepper. Pour over chicken until all chicken is completely coated.  Then place chicken on backing tray and place in oven for 15 minutes and then flip chicken over and then bake chicken until cooked thoroughly and crispy.
This process is a good base for and chicken wings that you wish to coat in a sauce as the baking powder mixture provides for the sauce to soak into, thus not making the wings feel slimy.
While the wings are in the oven it is time to make the sauce. In a pot, I toasted a spoonful of sesame seeds, and placed them on the side to use as garnish later. On a low heat, I then added the ingredients for the sauce, it’s is ideal to taste as you go along to see whether you need to add more of an ingredient, I like my sauce on the sweet side so added a bit more of honey. Turn the heat up and allow sauce to reduce and thicken. Place sauce to the side to cool for around five minutes.

Once the wings have been made and sauce has cooled mix them together, any left over sauce can be used as a dip or placed in an air tight container to be used at later (can be kept refrigerated for a week).
