Food Moment: Baked Mac And Cheese

My little sister's love (borderline addiction) for Mac and cheese made me want to learn how to make it from scratch. I have mastered this recipe and made it fool proof for anyone to follow.

You will need
Cheese (I use chedder cheese grated and block, parmigiano-reggiano cheese grated and shaved)
4 Tbsp Plain Flour
4 Tbsp Butter
2cups Milk
2cups Single Cream
2 gloves of Garlic
Onion Powder
Black Pepper
Chilli Powder
Nutmeg
Oregano
Salt
Pasta (I used macaroni)


  1. Preheat oven to 200 degrees
  2. Line baking dish with cooking spray.
  3. Boil pasta in salted water (appoximately 1 tablespoon). You want to slightly undercook your pasta as it will continue cooking in the oven.  Cook for 5-7 minutes, once cooked drain and place to the side while making the cheese sauce.

  4. In a large sauce pan melt butter over a low to medium heat. Once butter has melted and starts foaming/bubbling add flour and whisk the flour into the butter to form paste. Let this cook for approximately one minute while mixing.

  5. Slowly add in half a cup of milk and half a cup of single cream mixing constantly to avoid the formation of large lumps. Mix until a smooth consistency is achieved.
  6. Slowly add the rest of the milk and cream on a medium heat. Whisking as you add until smooth. Allow sauce to simmer and thicken some more for approx 5 minutes. While sauce is thickening add seasonsing to your taste.
  7. Once your sauce is at your desired thickness  (thick enough to coat the back of spoon), it is now time to add your cheeses. Add in parmigiano-reggiano and some of your chedder cheese. Mix and make sure the cheese has melted thoroughly. 

  8. Add cheese sauce to pasta, mix and make sure all the pasta is coated.

  9. This is an additional optional step. I added some bacon that I grilled to the pasta and cheese sauce.

  10. Spoon the pasta into baking dish spinkle grated chedder as you create a layer, repeat this until all the pasta and cheese is used up.
  11. Cover the final layer with a layer of grated chedder cheese 

  12. Place baking dish in oven, in the centre for approx 30 minutes or until the dish is golden brown.

  13. Take dish out to cool
  14. ENJOY!!!
